You Need To Make This Spiked Cheese Fondue ASAP
We don’t think there is anything better on a grey cold evening than dipping all our favourite foods inside a big oozing bowl of cheesy goodness, you agree, right? Right! Well then you’re going to love this. We have just discovered the best adult and super simple trick to levelling up any fondue - spiking it with vodka. Yes, you read that right. Mark Hix, the incredible British gastronome who has decades of experience in the hospitality industry, in collaboration with Black Cow Vodka - the uniquely innovative vodka brand which is created using the leftover whey as a result of cheese making have created the ultimate cheese fondue that might just save 2021. The two added together add just the right amount of adult-warmth needed; plus it tastes bloody moooovellous. Yes, we are sorry about that - we may have had a dip or two in our own fondue already.
Paul ‘Archie’ Archard, Co-Founder of Black Cow told us that “Black Cow vodka works so well in this fondue as it’s made using what is leftover from the milk when making the cheese itself, so it's like putting the whole product back together in one pot. It goes beautifully. Our vodka is exceptionally smooth so it adds to the richness of the fondue and complements the cheese without becoming an overriding flavour. And,of course, it adds a subtle kick!” and we couldn’t have put it better ourselves. So next time you get that cheesy craving, make sure to add a splash or two of vodka into the mix and let the cheese party commence.
Mark Hix’s Black Cow Fondue
Serves 4
250ml Double Cream
200g Black Cow Cheese, Grated
80-100ml Black Cow Vodka (or a splash more if you wish!)
Freshly Ground Black Pepper
Salt
Your favourite accompaniments to dip (potatoes, fresh or cooked vegetables, crispy bread)
Method:
1. Put the cream, Black Cow cheese and vodka into a bowl over a pan of simmering water, stir-every so often until the cheese has melted and the mixture is of a thick, sauce-like consistency. If you have a fondue set then simply put the ingredients into the pot, light the burner and stir every so often.
2. Season to taste and add more vodka if you wish.
3. To serve, carefully skewer anything you wish to dip onto a fondue skewer or wooden kebab stick and get stuck in.
